on some installations I cant update gallery extra.
What can I do?

Judging from the screenshot, the last message that gets logged before the installation hangs, is that the code “attempts to preserve” the assets/components/gallery directory (by creating a ZIP-file of it).
The Gallery extra however uses this folder to create a cache (assets/components/gallery/cache) for the thumbnails.
It could be, that if there are a lot of files in this cache-folder (or the server is quite slow), the creation of this ZIP-file takes too much time and a timeout happens.
